It's our Anniversary this coming Monday. 8 years! We went out last weekend on a fabulous date! I told Josh I thought it would be fun if we started taking turns planning our dates each year. Since this was my suggestion, I thought it only fair to be in charge of things this time. I put alot of thought into what we should do and came up with going to dinner at Log Haven up Millcreek Canyon and then hike Ensign Peak.
We dropped the kids off at my Mom's and I gave Josh the driving directions. It was a surprise and he had no clue where we were going. I told him to dress up! I don't think he was too thrilled about wearing a tie, but I thought he looked very handsome.

Our dinner was fantastic. The scenery was so beautiful. Waterfalls, ponds and beautiful forest trees!
We walked around the grounds a little bit after dinner. They were hosting a wedding so most of the restaurant was reserved.
Our reservations we for 5:30, which is their first seating for dinner. We got a beautiful table in the corner with huge windows on either side. What a view!Josh ordered steak and lobster.
I got a halibut platter. I'm not a fish eater so I went out of my element. Glad I did, it was very tasty.
Our meal was 4 course. A pre appetizer, tempura battered shrimp. Our appetizer was chicken rice rolls with a peanut sauce, our main course and then dessert! Josh ordered a lemon custard with a pistachio crust and I got the most amazing chocolate dessert! Dark and milk chocolate gnash, white chocolate moose and ice cream with a few blood oranges. HEAVEN!
Afterwards we headed up to Ensign Peak. I chose to do this hike because we did it one evening on a whim right after we were married. Fun memories and the most spectacular view of the Salt Lake Valley.
I brought clothes for us to change into, but there really wasn't a place to change. I did manage to get out of my skirt and heels.It was getting pretty dark and the skies were threatening. It was cool so I brought a blanket from out of the car.
The hike is fairly easy, but it does have a sharp incline. I'd say it was an hour round trip, depending on how much time you spent at the top.

Josh was such a great sport. He lugged up my tripod all the way to the top! It was worth it because we got some fun pictures.

We've accomplished so much together since first starting our family 8 years ago. I don't know if either of us could have imagined the joy and happiness we've been able to experienced together. We still have so much to look forward too! Josh is the best Husband and Father, he makes me proud every day! We really are so perfect for each other.It was a wonderful evening, we had so much fun just being together. Happy Anniversary babe, I love you!!!

Britney, that was such a great post!! I love all the pictures of you two, it looks like you guys had a lot of fun! We're going to have to try that restaurant, it looks really really good and nice.

I am so glad you had a wonderful Anniversary celebration. Noah took me to Ensign Peak as a surprise when we were dating...yeah..made me climb it blind folded....
What a fun date, good idea! And I love the outfit!! Those pictures turned out so great, but I'm sure it's easy when you have such beautiful subjects!
